Bobby's Goulash






I've never had goulash, but this recipe reminds me of chili mac without the beans.  Love one pot meals!

The reviews of this recipe were mixed about the seasonings.  Many said they would not use as much salt the next time they made it.  I suggest adding the seasonings a little at a time, tasting each time.

Ingredients

2 pounds lean ground beef
2 large yellow onions, chopped
3 cloves garlic, chopped
3 cups water
2 (15-ounce) cans tomato sauce
2 (15-ounce) cans diced tomatoes
2 tablespoons Italian seasoning
3 bay leaves
3 tablespoons soy sauce
1 tablespoon House Seasoning, recipe follows
1 tablespoon seasoned salt
2 cups elbow macaroni, uncooked


House Seasoning:

1 cup salt
1/4 cup pepper
1/4 cup garlic powder

Mix the ingredients together and store in an air-tight container for up to 6 months. Use as a seasoning on meat and when cooking vegetables.




Directions

In a Dutch oven, saute the ground beef over medium-high heat, breaking up the meat while sauteing. Spoon off any grease. 

Add the onions and garlic and saute until they are tender, about 5 minutes. 

Add 3 cups water, along with the tomato sauce, diced tomatoes, Italian seasoning, bay leaves, soy sauce, House Seasoning, and seasoned salt. Stir well. 

Place a lid on the pot and allow this to cook for 15 to 20 minutes. 

Add the elbow macaroni, stir well, cover and simmer for about 30 minutes. 

Turn off the heat, remove the bay leaves.  Allow the mixture to sit about 30 minutes more before serving.
Serve with garlic bread and a salad.

Lemon-Rosemary Roasted Chicken Thighs with Potatoes



Baking with rosemary fills the house with a delicious aroma.  I always use rosemary when making a roast chicken and sometimes pork.

First of all, several changes I'd make . . . use boneless chicken tenderloins.  It looks kind of dry and one of the commenters mentioned that she doubles the recipe for the dressing . . . I can see why.  Also, I would dice the potatoes and steam in the microwave for about 5 or 6 minutes before baking in the oven.  It is something I do to ensure crispier potatoes that are always tender and fluffy inside.

This is one of those recipes that is a fairly quick prep and the oven does most of the work!

Ingredients

1/4 cup olive oil
2 lemons--1 zested and juiced (about 1 1/2 tsp. zest, 4 tbsp. juice) and 1 thinly sliced
1 tablespoon Dijon mustard
2 cloves garlic, minced
1 1/2 pounds red potatoes, cut into 1-inch cubes
1 1/2 pounds bone-in, skin-on chicken thighs
4 sprigs fresh rosemary


Directions

Preheat the oven to 425 degrees . 

Whisk the olive oil, lemon zest and juice, mustard and garlic in a small bowl and season with salt and pepper.

Toss the potatoes, chicken, rosemary and sliced lemon with the dressing in a rimmed baking dish. Season. 

Arrange the potato mixture and chicken, skin side up, in a single layer.

Roast, about 35 to 40 minutes, turning the potatoes once, until the potatoes are golden-brown and tender and the chicken is cooked through.

Skillet Chicken Nachos



I  love quick and easy one pot meals, especially when they show promise of versatility like this recipe from Betty Crocker.  It can be made with chicken, beef, pork or no meat at all.

Have you discovered the convenience of frozen chicken tenderloins?  They aren't usually very pricey and often go on sale.  You can take them from freezer to skillet as they thaw out before they are browned.  Perfect for this type of meal!  I have used them for years.  They also have boneless and skinless chicken breasts, but I prefer the tenderloins.  Try it sometime!



Ingredients


    • 1 tablespoon olive or vegetable oil 
    • 1 1/4 lb boneless skinless chicken breasts, cut into 1/4-inch pieces 
    • 1 package (1 oz) Old El Paso® taco seasoning mix 
    • 1 can (8 oz) tomato sauce 
    • 1 medium red bell pepper, chopped (1 cup) 
    • 1 can (15 oz) Progresso® black beans, drained, rinsed 
    • 1 can (7 oz) Green Giant® Niblets® whole kernel sweet corn, drained 
    • 2 cups shredded Mexican cheese blend (8 oz) 
    • 6 oz tortilla chips (about 42 chips) 
    • 1/4 cup chopped fresh cilantro

Directions


    In 12-inch nonstick skillet, heat oil over medium-high heat. Cook chicken in oil 3 to 5 minutes, stirring occasionally, until no longer pink in center.
    Stir in taco seasoning mix, tomato sauce, bell pepper, beans, corn and 1 cup of the cheese. Reduce heat to medium; cook 3 to 5 minutes, stirring occasionally, until heated through and cheese is melted. Divide tortilla chips between 6 plates. Spoon chicken mixture evenly over chips. Sprinkle with remaining 1 cup cheese and the cilantro.

  • For Skillet Beef Nachos:
  • Substitute 1 1/4 lb ground beef for the chicken. In step 1, cook beef 5 to 7 minutes or until thoroughly cooked. Drain and proceed as directed.

One Pot Baked Ziti




One pot meals are awesome in many ways.  I love this recipe since it is quick and easy unlike my usual tomato sauce that cooks for hours.  And the ziti cooks in the sauce and not in boiling water!!!

Ingredients:


    • 1 lb Italian sausage, casings removed 
    • 1 Tbsp dried minced onion flakes 
    • 4 cloves garlic, minced 
    • 1 (28oz) can crushed tomatoes (San Marzano) 
    • 1/2 tsp salt 
    • 1/4 tsp red pepper flakes 
    • 2 tsp Italian seasoning 
    • 2 cups water 
    • 12 oz ziti 
    • 1/2 cup ricotta cheese 
    • 1/3 cup heavy cream 
    • 1 cup shredded mozzarella cheese 



Directions:

Brown Italian sausage in 9-inch (2.5qt) oven save pan until browned. Drain fat.

Add onion flakes and garlic. Cook for 30-60 seconds, until fragrant. Stir in tomatoes, salt, red pepper flakes and Italian seasoning.
Add water and ziti. Bring to a boil. Reduce heat to low and cover skillet. Simmer for 15-20 minutes, until pasta is tender.

Remove skillet from heat. Stir in ricotta and heavy cream. Cook on low for 5 minutes.

Remove from heat. Top with mozzarella cheese.

Broil until cheese is melted and bubbly.
